South of Dixie Giveaway

When I started blogging I somehow stumbled upon:  http://justanotherwife.blogspot.com/ and have been a loyal reader since.

This blogger is a real Southerner who provides great ideas for your home!  She is an avid sewer and is always showing good example of projects to make.  She is practical and makes delicious dishes.

For me this was a tough one, as I am not that much of a casserole girl, but more of a crock-pot girl! 

However our friends introduced us to this great Beef and Bean Casserole:

1 1/2 pound of ground beef
3 cans pinto or kidney beans
2 can tomato sauce
1 jar of salsa
1 tbsp. of chili powder
1 cup shredded cheese ( I use a lot, and use as much as you like)

1. Pre-heat the over to 350 degrees
2. Brown the meat
3. Combine all of the ingredients except for the cheese.
4. Place in a casserole dish, and bake for about 40 minutes to an hour with a cover.
5.  Once hot how you like it, cover with the cheese and bake until the cheese melts!

You will love this.
Now when I make it, I just mix whatever I have.  2 pounds of ground beef, pink beans, two jar of salsa, etc.

I actually canned 20 pounds of heirloom green tomatoes for this dish, that reminds me I have not used them yet!

I am going to have to make this again soon!

Serve ontop of homemade corn bread!!
